Joe McC.,
I, too, have been concerned about the baptisms in which the word "We" was used instead of "I". I have no particular knowledge of Canon Law but I suspect there are Canon lawyers who have probably reviewed, or are reviewing, these cases.
In this day and age when pronouns have become a matter of extreme controversy, this may be one of the more interesting stories for the press. Of course words are important and go far beyond their dictionary meaning. Although it may sound trivial to many, non-Catholics and Catholics, the Church takes this issue very seriously. As for the sacrament of baptism the word "I" is a substitute for Christ. You, and I, agree that it should probably be a matter to be resolved by the Pope.
If I recall correctly there is such a thing as "baptism by desire". Would that be applicable here? And could that apply to the other sacraments these people have received?
If any of our classmates who have entered the religious vocations are following this story and are seeing this thread, please give us your expertise and what, if any, options would be possible.
